Five Ways To Bake A Bake @ Home Box!
Good morning folks, and happy Sunday! We hope you’ve had a great week, did you know that summer has officially started? That’s right, Wednesday was officially the longest day of the year, we hope you managed to enjoy some sun this week, maybe had a barbecue, or a picnic in the park?
On that note, what do you bring to barbecues and picnics? We have a great idea, what about some freshly baked cookies? so we came up with some yummy recipes for you to try at home and enjoy!
So before we start, what are our Bake @ Home (BAH) boxes?
Well it's 6 cookie pucks, a pot of chocolate coins, a pot of our yummy chocolate sauce, and a pot of coconut whipped cream. All served in a box with baking paper, and instructions, so that you can make the perfect cookies in your oven.
We have 2 different types of boxes, a fruit box which has 2 classic chocolate chip cookies, 2 Strawberries and Cream cookies, and 2 chocolate orange cookies. We also have a chocolate box that has 3 classic chocolate chip cookies and 3 double chocolate chip cookies. In this blog we will be showing ways to use both boxes, in various ways, some recipes will require extra ingredients but we will list them all for you!
The original way, freshly baked in the oven, using the chocolate sauce and whipped cream to dunk your cookies into. Also a little tip, if you put the chocolate coins on the cookies when they're fresh out the oven they melt into the cookie, just like they do in store!
You can then top them with the cream and ganache or just dunk them, or even have them as they are. They’re absolutely delicious and great for taking on picnics, or to parties
2. A yummy smoothie bowl, that also has a healthy portion of fruit for your 5 a day! This recipe can make up to 4 bowls, or 8 small lunch boxes
You will need:
2 pucks (we used orange)
3 ripe bananas, frozen is best but we did fresh
Some plant based yoghurt or milk (or your preferred milk/yoghurt)
Some fruit, fresh or frozen, we used strawberries and blueberries
Any other toppings you like
Partially defrost your cookies, and section them into small balls, make them as big or small as you like. Bake these for 5-8 minutes at 170.C (or 180.C without a fan),and leave to cool for about 10 minutes.
Whilst they're cooling down, blend your bananas with your yoghurt or milk, and chop your fruit.
Assemble in a bowl (or lunch box) and you have a yummy smoothie bowl, that not only has some of your five a day, but is yummy and has tiny crunchy cookies!
3. Popcorn bars, these little rice krispy treat inspired bars are a great option for movie nights, office potlucks, and just extra’s for any summer activities you might be attending, plus they can be done in less than 30 minutes!
You will need:
Popcorn, we used sweet and salty but whatever you like is good, we would recommend one that’s not too sweet though!
Any 2 cookies from a BAH box, defrosted, we used some orange cookies
Chocolate, you can also use the chocolate ganache and/or swiss coins from your BAH box
Vegan marshmallows (or your preferred mallow of choice)
Any extra toppings you like
Method:
Take your 2 defrosted cookie pucks and roll them into small balls, any size you like, bake them for 5-8 minutes at 180.C (170.C for a fan oven), leave to cool for 10 minutes
Melt the marshmallows in a bowl, you can use a double boiler technique but 30 seconds increments in a microwave is what we did
Once melted to a sticky consistency mix in the popcorn (we recommend lightly coating your spoon or spatula with oil to prevent sticking)
Place some chocolate over the top and pop them in a warm oven (or just on a low temperature) for a few minutes, until the chocolate melts
Place your cookies on the top, along with any extra toppings you like
Pop it in the fridge or freezer to set (for at least 10 minutes), then cut into bars or squares, use a lightly oiled knife for this to prevent sticking, then simply enjoy!
4. Stuffed cookies, these monster treats are great for sharing (or not), and pair perfectly with a scoop of ice cream
You will need:
At least 2 cookie pucks of your choice, we used a chocolate chip and a double chocolate
Marshmallows
Chocolate (you can use the coins from your BAH box)
Any other ingredients you like (we used blueberries)
Any vegan ice cream you like
Method:
Defrost your cookie pucks and take 1 cookie puck and completely flatten it out, trying to create a bowl shape as you go. Put your stuffings into the bowl and place it on a baking sheet. Then flatten the second cookie and place it over the stuffings. Then gently form a ball with these and pop them in the freezer for at least 20 minutes. Then bake for 20 minutes at 180.C (170.C for a fan oven) let them cool for a few minutes and then pop a scoop of ice cream on top and enjoy your ooey, gooey delicious stuffed cookies
P.S. If you’re really looking to be extra indulgent bake them on foil (or in a cast iron skillet) in a BBQ for an extra special treat
5. Smores, that’s right, smores, the ultimate summer treat that brings back memories of camping out, carving sticks and making the best snack ever. Heavenly toasted marshmallows, chocolate, and biscuits, but this time with the best twist. A cookie base.
You will need:
Strawberry cookies (from our BAH fruit box)
Chocolate, you can use the swiss coins from the box for this)
Vegan marshmallows (optional)
Your favourite biscuit or salty cracker (optional)
Method
Put your strawberry cookies onto a baking sheet, marshmallow side up and place the chocolate on top, bake following the instructions in the box. Then toast your marshmallow/s (campfire is optional), once you have removed the cookies from the oven place another piece of chocolate on top, your toasted marshmallow/s and then you can add the biscuit/cracker if you choose. Leave to cool for at least 5-10 minutes and then enjoy an indulgent childhood flashback.
